January 03, 2019 – Shoveling Snow Day

The kids are back to school after Christmas vacation!

We just had a few rounds of snow and after the latest round we didn’t get out to shovel. Getting out of the driveway this morning wasn’t fun. After school we stayed outside and shoveled the snow and ice in the bright sun. DD made snowballs. I imagine some people might think, “Let the sun take care of it.” The snow was pretty packed down. I wanted to make sure the sun dried up as much melted snow as possible so the water doesn’t refreeze. Also, I love shoveling. It’s great exercise in winter and I like the fresh air!

The rest of my day was spent at my desk working on bookkeeping. I also started work on a new planner for the new year. I will have to share a picture when I finish.

January 02, 2019 – Coffee, Coffee, I Heart Coffee

This morning I was taking a peak at Facebook when I came across Stoughton’s 21st annual Coffee Break Fest Event. SIGN. ME. UP! I did! I responded as “going” and I will get the registration papers in for the giggleFritz and Co. booth.

I love that they created the event this early in the year. It gives me something to look forward to while I work on inventory and taxes. That, plus coffee, will get the job done!

January 01, 2019 – Happy New Year Sock Monkey

Oooooo….I wrote it down on the very first day of the year. I got the new year correct on the first try! I am sure I will mess a few dates up on checks soon to follow. I’ll have to work on that.

I wanted to post something here on the very first day of this new year. I wanted it to be special. I sat down and whipped up a sock monkey sketch – in ink! That is bold for me. When I sketch it is in pencil and I use many wimpy light lines until I form the shapes I want. NOT TODAY! I laid it down in ink, Baby! INK!

Not bad, but I just noticed, no tail!

As I was working on my sketch DD saw what I was doing and wanted to know if she could make a picture too. I said, “Of course!” She made the same drawing but decided to use a duck instead of a sock monkey. I love it!

Frosty December Morning Picture

Hello, All!

When I woke up this morning, I kinda felt like a mess.  We had bowling last night and we stayed up late. I rolled myself out of bed and hit the ground running. We had to get ready for church. I made us all some cheesy egg sandwiches with DD’s cartoon playing in the background.

When I had a chance to peak outside, I noticed it had frosted overnight. It was pretty warm yesterday, so everything that had thawed out refroze. It was absolutely beautiful! Because we were running on time (for a change), I ran and got the camera. I was trying very hard not to capture the other houses in our subdivision. I just wanted frosty nature. This is my favorite picture of the bunch.

I think I took this picture at a good time. The sunrise adds some color and I love the frost. It’s hours later now and the sun has melted some of the beauty away. It will be warm again today and we will have to get outside and enjoy it.

I have a few things left to do before noon when the Packers play the Bears. I need to get some hand stitching done on a sparkly Socktopus. I will add some things to my booth at The WB Merchantile and my online shops this week. I better get crackin’, I also need some time today to relax. Another busy week before Christmas awaits us!

Christmas Cookie Cutout Kits

This morning, during my trip to Aldi’s, I saw these cute cookie cutout kits at the checkout.

Ninjabread Cookie Cutouts!!

This kit caught my eye, it is soooo cute! I love gingerbread cookies. I don’t need a kit to make cookies, but I would buy it to have the cookie cutters for the future. I am hoping they have some kits left after Christmas so I can get one marked down.

Ugly Sweater Cookie Cutouts!!

One year, my cookie-making partner/sister got one of these kits through a fundraiser from a friend. They didn’t make a lot of cookies, but they were super fun to decorate. Also, again, now she has the cookie cutter to make as many ugly sweater cutouts she desires.

I don’t think I got any cutouts made last year. DD and I did some Spritz cookies and some toffee (I think). I have no idea what I will get done this year. I can’t seem to get my head truly into Christmas this year. Maybe some Ninjabread cutouts can help!

Slow Cooker Recipe – Creamy Italian Chicken

Hello All!

I am updating a recipe I shared on my “Recipes” page. We eat “Creamy Italian Chicken” 3-4 times a month and it has changed a little since I posted it. It is such an easy and inexpensive dish to make. AND I think is absolutely delicious!

Creamy Italian Broccoli Chicken

Creamy Italian Broccoli Chicken (slow cooker)

Ingredients (3 to 4 servings):

2 boneless skinless chicken breasts (about 1 lb.)
6 oz cream cheese
1 packet of Italian or Ranch dressing seasoning
1 – 10.5 oz can condensed Cream of Chicken soup
1 cup milk or water (1 canfull)
2 cups of chopped broccoli crowns

Directions:

1. Place chicken breasts in slow cooker. Put cubed cream cheese on top of chicken.
2. Mix milk, soup and dressing packets together, then pour over chicken.
3. Cook until no longer pink. 3-4 hours on high, or 7-8 hours on low.
4. Remove chicken from slow cooker and shred with forks.
5. Use a whisk to blend the chunky Cream cheese cubes into the soup mix. (The sauce may still be lumpy)
6. Add chopped broccoli to slow cooker and turn setting to high. (I prefer to steam broccoli separately.)
7. While broccoli is softening up, cook rice, quinoa, or pasta accordingly.
8. Serve chicken and broccoli over rice, quinoa, or pasta. (We like angel hair pasta!)

My family of three (Husband, Me, 5-yr old) eats half and freezes the other half for another meal. It stretches and is so good! Give it a try!
